Thankful & Gluten-Free

Thankful & Gluten-Free

I don't know about you, but our family of 7 plans our Thanksgiving menu months in advance.... and everything is on the table (pun intended).

While I'm usually more of a turkey & sides traditionalist, my husband and kids love to switch it up with BBQ, Mexican, or a straight-up all-American steakhouse dinner.

This year we opted for tradition, given that tradition has been thrown out the door so often this year already.

Our 2020 gluten-free Thanksgiving menu will feature:

    • turkey
    • mashed potatoes with gravy
    • sweet corn
    • peas
    • green bean casserole
    • cupcakes
    • pumpkin bread
    • cheesecake

For the gravy, my husband, Tim, adds turkey stock (that he has enhanced by reducing it with carrots, onion, celery and fresh aromatics) to a roux made of butter and gluten-free flour.

We found gluten-free french fried onions and a gluten-free cream of mushroom soup to make the traditional green bean casserole, and I really like the King Arthur gluten-free boxed cake mixes with an easy homemade buttercream frosting for cupcakes.

Our family loves this Gluten-Free Pumpkin Bread recipe from America's Test Kitchen, shared by Gluten Free & More Magazine. I make it without nuts and we use (and highly recommend) Mehl's gluten-free flour. It tastes like all things Fall and makes the house smell so good while baking!

And the crown jewel of the dinner (in my opinion, at least)... Tim makes THE best sky-high New York-style cheesecake. (It's basically a meal in itself!) He uses gluten-free graham crackers or crumbs, or even gluten-free arrowroot animal crackers for the crust...whatever we can get our hands on. And then he tops it off with this simple, but so good, homemade blueberry sauce from My Baking Addiction. Voilà!

What's on your table this Thanksgiving? I wish you a blessed holiday. Stay safe and healthy.

When our daughter was diagnosed with Celiac Disease at age 4, Tim immediately went to work on a gluten-free recipe that would taste just as good as the non-GF version. After several taste tests with the most discerning young palates, he nailed it. Light and fluffy, perfectly golden – gluten-free – perfect pancakes!
